Domaine du Météore – Perséides AOP Faugères Rouge BIO 2020
Perséides has a clear, bright garnet colour with purple hues. The nose is expressive with liquorice, peppermint and cocoa. On the palate, the silky tannins precede a long, generous and warm finish. This wine will be an excellent accompaniment to vegetarian dishes such as ratatouille or vegetarian stuffed aubergines, but also to meat dishes such as duck breast with ceps or roast lamb, or even more exotic dishes such as Mexican tacos.Glasempfehlung: Ein Bordeaux-Glas oder das Universalglas von René Gabriel.
VINIFICATION
The de-stemmed and partially crushed grapes macerate in the fermenting must. The aromas of the Grenache are extracted by delicate delestage. The aromas of the Syrah and Mourvèdre are released by pumping over and manually spraying the skins. The Grenache grapes are aged in stainless steel vats for 18 months, while the Syrah and Mourvèdre grapes are aged in 500L oak barrels for the same period. The wine is blended just before bottling.
